Liquorice baked Smoked Gammon



Cooking liquor


5/6 crushed sticks of liquorice root
1 orange cut in half
2 bay leaves
2 star anise and 5 cloves
1 tbs of black treacle
1Kg smoked "slipper" Gammon

 



Place the gammon and all the ingredients in a pan and cover with water. Then, bring to the boil and simmer for about 1 hour.
Leave to cool in the cooking liquor for a further hour.
Meanwhile, reduce a pint of the strained cooking liquor to a syrup.
Remove the gammon from the liquor and the coat in the syrup and place in a hot oven 210c, to glaze for 15 mins.

Chill and refrigerate
Serve thinly sliced with a peppery rocket and radish salad.
